What is “Yukimuro” (Snow Cellar)?

“Yukimuro” is a “natural refrigerator” that is handed down in Joetsu, a snowy country.
“Yukimuro” snow cellars have been in use since days long past. They are made of winter snow, which is collected into a large pile and covered with straw and other materials to prevent the snow from melting. This is then used to store things such as food until summer.
Nowadays, a large warehouse is used to store food by partitioning it into a room for storing snow and a room for storing food.

Recently, “Yukimuro products” have been developed that use ingredients that have been preserved and aged in the snow cellars.

Efects of “Yukimuro” (Snow Cellars) Storage

・Compared to refrigerators, the temperature in Yukimuros is kept constant, so the foods are kept without temperature stress.

・The freshness of the foods is maintained inside Yukimuros as the temperature is about 0°C to 3°C and the humidity is 90% or more.

・Fermented products, such as sake, miso and soy sauce, are matured the optimum amount in Yukimuro, and their taste becomes milder and rounder.

How “Yukimuro” (Snow Cellars) Work

・Snow cellars are mainly categorized into two types; natural convection and forced convection types. ・ Food is mainly stored in natural convection snow cellars.

・In the natural convection method, without using any electricity, air is chilled and circulates naturally in the cellar using snow.
